Courtesy of: @customvegandiet Follow me on Instagram @jose_team810 to see more • • • • • • New York, New York Sloppy, creamy cashew tomato pasta 🍝 by @happyskinkitchen Ingredients: Makes enough for 3-4 people 1 small white onion – finely chopped 3 garlic cloves – minced 1 tin of good quality chopped tomatoes or passata A generous handful of fresh basil leaves – roughly chopped + extra to sprinkle on top 1 tbsp of olive oil for frying A generous pinch of salt and pepper for seasoning For the slow roasted tomatoes: About 250gr of cherry tomatoes A generous drizzle of olive oil Salt and pepper to taste To serve: your favourite pasta – I love bucatini Slice the tomatoes in halves. Place them on baking tray with the flesh facing upwards. Drizzle with the olive oil and sprinkle with salt and pepper. Place the tray in the oven and slow roast the tomatoes at 150 degrees Celsius for 35-40 minutes. Make sure not to roast the tomatoes at higher temperature otherwise they will end u...

Courtesy of: @the_greenquest For more, please follow me on Instagram by clicking here... • • • • • • Poitiers, France 🇨🇵⬇ Cauliflower, Ginger, Lemon & Sesame Soup 🧄 A perfect soup to warm you up during the long winter nights 😄 What's your favorite soup?  INGREDIENTS: 1kg6 cauliflower (a big one) / 4 garlic cloves / 400g mylk / 600g++ water / 60g Tahini / 10g fresh grated ginger / 50g lemon juice / 1 tbsp maple syrup / Salt&pepper  Cut the cauliflower in florets and place them into the steamer's basket with the garlic cloves. Cook for 10mn (until tender). Blend them (wait for them to be cold if you don't have a warm-proof blender) with all the other ingredients. Add more water if you wish. Season with salt & pepper. Credit to: @veganhealthybowls (IG) • • • • • • New York, New York 🌱Most Crispy Potatoes 🥔🥔🥔🌱 Credit @cookingforpeanuts . . ✅Recipe: Peel and cut 4 medium yukon gold potatoes into about 1 1/2-inch pieces. ✅OPTIONAL:Soak in enough water to cover, plus 2 teaspoons salt, for 20 to 30 minutes. ✅Drain the potatoes. ✅Preheat the oven to 425F. ✅Boil about 5 cups water (or enough to cover the potatoes by 2-inches). Add 1 tablespoon salt, and the potato pieces. ✅Cook for about 7 minutes, or until the potatoes are just fork tender but still meet some resistance in the middle. ✅Drain the potatoes and transfer them back to the empty hot saucepan for about 30 seconds so they dry out. Give them a really good shake in the saucepan to rough them up and break up the outer layers. The outsides should look a bit messy. ✅ Transfer the potatoes back to the colander. ✅Use a large rimmed baking sheet that can fit the potatoes in a single layer without them touching. ✅Add enough olive oil to t...
